There is nothing more Greek than its tavernas, which have remained relatively unchanged in their essence since ancient times. Chios town's many tavernas serve up this rich heritage along with a comfortable ambiance and fresh seafood.

Try Hotzas Taverna, overlooking town, which deftly twists traditional dishes like lamb kebab and yoghurt with roquette into surprising new forms. Kechibari Ouzerie serves small but delicious plates of fresh fish and seafood along with the national drink, ouzo. The stomach-settling spirit makes for a convivial atmosphere.

UNESCO sites

Explore Chios' Old Quarter, which is home to historic Turkish houses and a Genoese castle, as well as ancient city walls. At the castle, you have the opportunity to indulge in a traditional Turkish hammam. Then, wander along the waterfront to the airy public gardens (Vounaki). This is transformed into an open air cinema on summer nights.

Nea Moni Monastery in the centre of the island is considered one of the most important of Greece's endless heritage sites. A festival is held in August at the UNESCO protected site, which stands opposite the fascinating Byzantine Museum.

Ancient frescoes and multicoloured caves

Don't miss the Cave of Sykia Olymbi, a cool 150 million years in the making, which was discovered in the 1980s. It is 57 metres deep and packed with rainbow-coloured stalactites and striking rock formations.

Not far from the castle's main gate is a tiny museum inside the 15th century Giustiniani Palace. Take a look at the twelve Byzantine frescoes of the prophets, which date from the 13th century.
